Simple Marzipan Cake
A simple, airy, marzipan cake that can be done in an hour or less!

Ingredients (For the Dough):
250g Marzipan paste
50ml Amaretto
200g soft butter
150g sugar
Pinch of salt
4 medium-sized eggs
220g all-purpose flour (Type 405)
3 tsp baking powder
Butter for greasing the pan
For the Chocolate Glaze:
150g dark chocolate
50g milk chocolate
Steps
Preheat the oven to 180 degrees Celsius (360 degrees Fahrenheit) with both upper and lower heat (160 degrees Celsius for convection).
Grate the Marzipan roughly using a household grater. Mix it with Amaretto in a mixing bowl and stir until smooth using the whisk attachment of a hand mixer.
Grease a loaf pan (25 x 12 cm) with some butter. In a separate bowl, beat soft butter with sugar and salt until creamy and white. Gradually add the eggs while continuing to mix. Mix flour and baking powder, then alternately fold it into the batter with the Marzipan mixture.
Fill the batter into the prepared pan and smooth the top. Bake in the lower third of the preheated oven for about 60 minutes. Test with a wooden stick after the baking time to ensure the cake is fully baked; no batter should stick to the wood. Let the cake cool completely in the pan on a wire rack.
Chop both dark and milk chocolate coarsely and melt them separately in bowls over a water bath. Release the cooled cake from the pan and place it on a plate.
